PB&J Yogurt

PB&J Yogurt is one of my favorite simple and delicious snacks.



PB&J Yogurt

INGREDIENTS 
- 1/2 cup nonfat, plain Greek yogurt (1 SmartPoint) 
- 2 tablespoons powdered peanut butter, like PB2 Brand (1 SmartPoint)
- 1 tablespoon Smucker's Sugar Free Preserves or Jam (0 SmartPoints)
- Optional: 1 Splenda packet--or zero calories sweetener of choice (0 SmartPoints)

INSTRUCTIONS
- Mix all ingredients until well combined.

NOTES
- Cut-up, frozen bananas would be a good zero-point addition to this!

Raspberry Chocolate "Pot de Creme" Light

Truth be told, this dessert is not as indulgent as a traditional "pot de creme"--you won't find any egg yolks and cream here.  But I do find that this lighter version of a pot de creme, which costs you only 2 SmartPoints, satisfies the craving quite well.  I hope you think so, too!




































Raspberry Chocolate "Pot de Creme" Light

INGREDIENTS 
- 1/2 cup nonfat, plain Greek yogurt (1 SmartPoint) 
-1 tablespoons Torani Sugar Free Salted Caramel flavoring syrup (or flavor of choice) (0 SmartPoints)
- 1 teaspoon chocolate shavings (1 SmartPoint)  See "Notes" below for more information regarding the chocolate shavings.
- 5 fresh raspberries

INSTRUCTIONS
- Mix the yogurt and Torani syrup until well combined and creamy.  Top with chocolate shavings and fresh raspberries.  

NOTES
- The Weight Watchers online calculator has the same SmartPoint value of 1 point for a teaspoon of chocolate shavings, whether you choose white chocolate, milk chocolate, or white chocolate.  I bet white chocolate would be really delicious!

Basic Yogurt Snack

This is one of my favorite snacks--nonfat Greek yogurt mixed with a variety of zero point mix-ins.  I am surprised by the creaminess of nonfat Greek yogurt, especially after it is well stirred.  Chobani is my favorite, but other brands will definitely work.  I buy the large containers to keep on hand for every time a craving strikes for something sweet.  This usually hits the spot!

Start with the Basic Yogurt Snack recipe, below, and choose from a variety of zero-point mix-ins.  Often, the half cup, one-point, version is enough to satisfy, but sometimes I go big and eat an entire cup for a whopping three points.  My favorite is the most simple of combinations: yogurt, splenda, and vanilla extract, pictured here.








































Basic Yogurt Snack

INGREDIENTS - 1/2 CUP VERSION (1 SmartPoint)
- 1/2 cup of nonfat, plain Greek yogurt (1 SmartPoint) 
- 1 Splenda (or Sucralose) packet (0 SmartPoints), or other zero point sweetener of choice

INGREDIENTS - 1 CUP VERSION (3 SmartPoints)
- 1 cup of nonfat, plain Greek yogurt 3 SmartPoints) 
- 2 Splenda (or Sucralose) packets (0 SmartPoints), or other zero point sweetener of choice

ZERO-POINT ADD-INS
- Vanilla extract (1/2 teaspoon for 1/2 cup version or 1 teaspoon for 1 cup version)
- Other extracts--check Weight Watchers for points calculations
- Unsweetened cocoa powder to taste (up to 1 tablespoon for zero points)
- Lemon or lime zest (1/2 teaspoon for 1/2 cup version or 1 teaspoon for 1 cup version)
- Fresh blueberries and/or strawberries
- Fresh bananas
- A few sprinkles of cinnamon
- Up to 1 tablespoon Smucker's Sugar Free jam or preserves (You may want to skip the sweetener with this option.)

INSTRUCTIONS
- Stir well, incorporate mix-ins, and enjoy!

NOTES
- If you can "afford" the extra point, mix-in 2 tablespoons of PB2 Peanut Butter Powder (chocolate is even better) in addition to the Splenda to either the half or full cup of yogurt.  Such a yummy dessert!

Four Point Pizza

Craving pizza?  This four point wonder is surprisingly filling.  The best part?  You can eat the whole thing for four points!






































Four Point Pizza

INGREDIENTS
- 1 "Ole Mexican Foods Extreme Wellness High Fiber, Low Carb" wrap as the "crust" (1 SmartPoint)
- 2 tablespoons jarred pizza sauce, like Prego (1 SmartPoint)
- 1 teaspoon vanilla extract (0 SmartPoints)
- 12 slices of commercially available turkey pepperoni or 1 ounce of this brand (1 SmartPoint)
- 1/2 cup fat-free mozarella cheese (1 SmartPoint)

INSTRUCTIONS
- Preheat oven to 400 degrees F.  Spread the sauce evenly on the wrap.  Starting with the cheese, top the pizza with remaining ingredients.  Bake until cheese is bubbly and pepperoni starts to crisp, usually around 8 minutes.  Cut into slices, and enjoy!

NOTES
- I find the wraps for the "crust" at Walmart.  I love the combination of pepperoni and pineapple.  Although pineapple has calories, it's a zero SmartPoints item, so if you're feeling indulgent, add some!  Add other zero-point veggies, such as green peppers and tomatoes, for extra flavor and variety.  Yum!
